We watch. We move forward, we step back, we commit to a direction and hold to it. Designing a restaurant, a bar, a caf\u00e9 is never an image laid over a plan. It&#8217;s a material worked over time. Sometimes a few hours. Sometimes a thousand, spread across years.<\/p>\n<p>Everything counts. The banquette and its finish. The light set here rather than there. The counter, the sound, the flow of footsteps, the threshold between the intimate and the collective. We coordinate contractors, subtrades, materials whose finishes have to agree. We hold the budget, the code, the upkeep of the years to come.<\/p>\n<p>From twenty-five seats to more than two hundred. From the street to the kitchens. A place like that lives collectively, from opening to close.
